Erin Rothstein is a Montreal born artist specializing in hyper-real paintings of food and fashion. In her series “The Tasting Room,” Rothstein channels her inner foodie: 

“I paint food because I love everything that has to do with food-culture,” Rothstein explains. “You’ll often find me cooking and eating, all the while engrossed in a total culinary experience of smells, tastes, and aesthetics. The foods I paint are universally relatable. They trigger people’s emotions on a very primal level, making them happy, hungry, excited, and nostalgic.”

“Beauty’s Bonjour Bagel” by Erin Rothstein

Knightstone commissioned this custom piece by Montreal born artist Erin Rothstein of a Beauty’s Bonjour Bagel from Montreal’s iconic diner, Beauty’s Restaurant. It is highly plausible that Beauty’s invented the concept of the Montreal brunch – at the very least, the iconic diner popularized it.

This signature piece hangs in the dining hall of Campus1 MTL Student Residence as it simultaneously internalizes and projects Montreal’s vibrant food culture and urban history. Knightstone’s executive team, all graduates of McGill University, spent many mornings indulging on a Beauty’s Bonjour sandwich while attending McGill University as students. This piece shares Knightstone’s nostalgia of past university days and celebrates an important piece of Montreal’s culinary history.
